Second generation restaurant space in Dallas: what do you inspect first?

Touring second generation restaurant space off a highway in Dallas. The dining room looks ready. What inspections do you run before you treat it as turnkey?

Hood, make-up air balance, grease interceptor size, and the walk-in compressor age. Then plumbing. A pretty dining room with a tired grease line is not turnkey.

Ask for the last health inspection and any grease hauler contracts. If the prior operator was cited for interceptor issues, budget to replace it rather than clean it.
